- 100g about 2 slices crusty italian bread thickly sliced
- 2 tablespoons olive oil
- 1 brown onion chopped
- 3 garlic cloves crushed
- 500ml 2 cups massel vegetable liquid stock
- 1 400g can diced tomatoes
- salt ground black pepper to taste
- 1 4 cup coarsely chopped fresh continental parsley

- preheat oven to 180u00b0c remove the crusts from the bread and cut into 1cm squares place on a baking tray and cook in preheated oven for 6 8 minutes or until dry and light golden in colour
- heat the oil in a medium saucepan over medium heat add the onion and cook stirring occasionally for 2 minutes or until it softens slightly add the garlic and cook stirring for 1 minute add the stock and tomatoes increase heat to high and bring to the boil reduce heat to low and simmer covered stirring occasionally for 5 minutes taste and season with salt and pepper stir in the toasted squares of bread and parsley and serve immediately
